Easy Veggie Rice Wrap Recipe With a Honey Dijon Dipping Sauce

My children love to eat Veggie Rice Wraps for Dinner or lunch. They are chalked full of flavor and are a great treat for them. I love how easy they are to make as well I can make them within 20 minutes and the sauce is delicious with it as well. I can easily make it for my son’s lunch for school as well and it’s perfect. He actually requests them often for school lunch and he has started to bring extra because his friends love them as well. So I put some extra in his lunch box so that he can share with the kids.

The rice paper is located in the Asian food aisle of your local store. I have found them easily in many of our stores here, so it shouldn’t be a problem to find.

3 Kale Leaves with the leaves torn into smaller pieces
1 carrot peeled and cut into matchsticks
1 Green Pepper Seeded and sliced into thin slices
1 Red Bell Pepper Seeded and sliced into thin slices
8 to 10 rice papers

Honey Dijon sauce:
1/4 Dijon Mustard
1/2 tsp Honey
1/2 tsp Brown Sugar
1-3 TBS Water

Step 1: Cut your Veggies up and get them ready for your rice wraps

Step 2: Add 1/2 cup of water to a pie plate for dipping your wraps into, you will only leave them in the water till they are wet then remove them so just a second or two then put them onto a plate to fill and roll

Step 3: Layer your Green Pepper, Red Pepper and Carrots, then place your Kale on top of them

Step 4: You can use either side now and pull it kind of tight over your veggies, then pull the other side of the wrap around and fold the ends over the sides so it looks like a roll.

Step 5: Flip over the roll, then continue to make the rest of the rolls the same way

Honey Dijon Dipping Sauce

Step 1: In a small bowl mix your all your ingredients but the water. One you see how thick the sauce is you will add your water

Step 2: Add water 1 TBS at a time to thin out your sauce, you don’t want it to thin, so one spoon may be enough for the sauce.

Step 3: Take your sauce and add it to smaller bowls for individual dipping

Place your wraps onto a plate with the dipping sauce. You can also add the extra veggies that you have on a plate in the center of the table to be used for extra dipping when the wraps are gone. The sauce can be made for just a nice dipping sauce for veggies without the wraps to encourage the children to eat more veggies.
