Acorn Squash stuffed with apples

I just love the fall and all the comfort foods that come along with it. The comfort foods even make the snow a little more tolerable, I did say a little. lol This is one of my favorite squash recipes and I make it frequently for the family because it’s so good and it’s one of the only ways I can get them to eat Acorn squash. It has a wonderful fresh fall flavor that they just can not resist!

The Acorn squash will make a great side dish to any meat or dish that your serving. They may give you a funny look at first like what is that! However, once they taste it the squash will win them over. It has a unique fall flavor that they are not going to want to pass up.

2 Large Acorn Squash
3 Gala Apples
1-2 tsp of Cinnamon
1 tsp Apple Pie Spice
3 tsp Honey
2 Tbsp Brown Sugar

You will want to cut the Acorn squash in half and remove the seeds. Then place the apples inside and then add the rest of the ingredients. Place 1 cup of water into the pan and then cover the pan with foil. Bake at 350 degrees for 30-40 minutes till a fork can be inserted into the squash and it’s soft.

Serves 4-6 people
