Edam Cheese Soup Recipe And Arla Dofino Cheese Review

I received Arla Dofino’s Havarti, Gouda, and Edam cheese to review with our family.

It’s been a rather chilly summer here but we are not complaining, today it is a whole 60 degrees out and it’s July, yes, this is not the normal weather by now we are having a heat wave! So it was a perfect time to make some Edam Cheese Soup and a great sub to go with it for dinner. I have to say that we have not eaten Edam Cheese before so I was pretty excited to try it. It was a big hit with the family, they all loved it. It wasn’t hard to make either, I had the soup made in about 45 minutes and the kids just loved it as did I. It has a sharp cheddar flavor that the Edam cheese offers. The Sub was so easy to make as well I used the Havarti cheese on the sub with Ham, Turkey and Salami with lettuce, Tomato, mustard and Mayo. It had an amazing flavor with the Havarti cheese on the sub. The Havarti cheese would be amazing on a Turkey wrap for lunch or other sandwiches as it’s Deli Cheese slices.

Edam cheese Soup Recipe:

1 cup Broccoli flowerettes
1 cup Cauliflower flowerettes
2 cups New England Potatoes (cut into chunks)
1/2 cup of leeks
6 cups Chicken Broth
1 cup of Milk
1 1/2 cups of Edam Cheese grated (Be sure to remove wax seal around cheese before grating)
2 Tablespoons of Butter
1 Tablespoon Italian Seasoning
1 tsp salt
1 tsp black pepper

Step 1: Grate your Edam cheese

Step 2: Wash and cut up all your veggies for your soup (You can use stems in your soup as well from Broccoli and Cauliflower in the soup as well.

Step 3: In a large sauce pan, melt 2 Tablespoons of butter, once it’s melted you will add in your Chicken Broth, your Leeks, Cauliflower flowerettes Potatoes and veggie stems, and salt, Pepper, and Italian Seasoning into the sauce pan for 20 minutes at a boil.

Step 4: once your veggies are soft you will add your Broccoli flowerettes to the pot and boil them for about 3-5 minutes

Step 5: You will now use your blender to puree the soup slowly and return it to your pan, do this till all of your soup has been blended

Step 6: Add 1 cup of milk and 1 cup of Edam grated cheese to the pan and stir till the cheese melts

Step 7: Put your soup into bowls and top with the remainer of the cheese

Makes 8-10 servings
